Everyone loves meatballs! This version packs a little surprise with the cheese centre.
Preheat the oven to 175℃.
Place the drained mini Mozzarella balls into a bowl.
Finely slice the sun-dried tomatoes and freshly chopped basil, place it in the bowl and toss with extra virgin olive oil. Mix well and set aside.
In a separate bowl, mix the minced beef with eggs and chopped parsley. Season with salt and pepper to taste.
Create hand-size burgers.
Place the mozzarella with some tomatoes and basil in the center of each burger.
Note: Try to guess the right amount so you don't end up with spare mozzarella or meat.
Wrap the meat round the filling and create a small ball.
Place the meatballs on a baking dish greased with extra virgin olive oil or butter.
Put them in the oven and bake for about 25 minutes.
Serve hot with greens!
These meatballs can be served with any side really. Green beans and/or peas and a traditional mash makes a delicious dinner or Sunday lunch.
