Turn overripe, blackened bananas into sweet and fluffy pancakes and then add whatever you desire.

 1 tbsp maple syrup
 1 tsp ground cinnamon
 1 tsp coconut oil

Easy, healthy Banana Pancakes are a healthy, filling breakfast served with fresh fruit and can be made in minutes.

Getting started

In a bowl combine the banana, two eggs and the cinnamon. Use a hand blender or a fork to combine everything. Aim for a consistency similar to pancake batter.

Place a frying pan on medium heat and melt the coconut oil. Slowly add the batter in the pan forming 5 inch diameter pancakes. Place a lid on and cook for a couple minutes on each side.

Repeat until you have cooked the whole batch.

Top with berries and maple syrup.

The pancakes can be frozen for up to 3 months. After they are completely cooled, place a sheet of parchment or wax paper between each pancake and stack together. Wrap the stack of pancakes tightly in aluminium foil or place inside a heavy-duty freezer bag. To reheat, place them in a single layer on a baking sheet and cover with foil.
